Visit the market table this week to register an 8-12 year old child for the cooking class which will take place on June 23rd from 4:00-4:45. The class will be held in the tent in the middle of the market. The cost is $5.00 and the kids can eat what they prepare. The theme will be “Yummy Breakfast Roll-ups.”
Rhonda Marcotte who did the food demonstration last week will be the instructor. Chef Marcotte will also be back with her food truck next week, featuring an expanded menu.
Many requested the recipe for the fantastic beet salad that Chef Marcotte demonstrated last week. Thanks to Our Harvest for donating the beets for the salad.
Roasted Beet Salad
1 pound beets, red
4 teaspoons olive oil
2 medium tangerines, peeled and segmented
4 tablespoons red onions, chopped
4 teaspoons white wine vinegar
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
Roast beets at 400 degrees in a foil packet for about an hour. Let cool, then cut into 1/2″ cubes. To them, add tangerines, onion and celery and toss gently. In a small bowl, whisk together vinegar, mustard, salt and pepper. Pour over salad and toss to coat.

Why not take time in this beautiful June weather to ride your bike to the market? Bikes are a very green way of getting around. Cyclists don’t burn non-renewable fossil fuels, and they don’t produce air pollution or other harmful emissions.
Bring a backpack and fill it with fresh, local vegetables and fruit and other great finds from the market. Remember we take credit cards, EBT and WIC.
